One of the finest chefs on the Gold Coast
Glen Bacon put on a stunning dinner for the Chaine des Rotisseurs in Videre
Restaurant at the Royal Pines Resort recently.
Held in the refurbished 21st floor
Videre with its sweeping Gold Coast backdrop the dinner began
with NV veuve d’ Argent, Blanc de Blanc and canapés which included steamed
prawns on lemongrass with a lime leaf sauce and tuna lollipops with sesame and
soy.

Main course was a tender roasted flat iron
steak, miso eggplant, puffed rice and horseradish accompanied by a 2010 French
Domaine de la Renjarde, Cotes du Rhone.

A French martini sherbet dusted with gold
leaf was served as a palate cleanser between courses.
Glen excelled himself by
presenting it in his trademark
"ice igloo"
To conclude a stunning menu a mango parfait, frozen ginger beer, rum cake, kalamansi lime gelee with a 2011 Frogmore creek iced Riesling from the Coal River Valley.

The night was highlighted by the customary
Glen Bacon flair and, of course, dishes of a very high standard.
If a
benchmark were needed for Chaine dinners, this was it.
